I answer this but with stipulation. I'm going to choose DS9 but only if it were to follow the post-series books up until Unity where it would be the finale. Because I think that would be an utterly fantastic ending for this show and I'd love to see it on screen.
Other shows that I would have liked to have had another season mostly because they never got a proper ending includes and in no particular order are: Firefly, Veronica Mars, Jericho, Dead Like Me, Tru Calling, Invasion & Surface. And I'm sure there are others that just aren't coming to mind right now.
